What is escarole?

Escarole is a member of the Endive family. Other members include: daisies, chicory and radicchio. Escarole is the broad leaf variety.

Our escarole went into a white bean soup… yum… though you can also eat it raw or sauteed.

It is very high in folate, fiber and Vitamins A&K.
